Smashed Potato Salad

by Shirley Herzog
(Cincinnati, OH)

Dear Oma -

I love both kinds of potato salad and have come across a 3rd version my family likes.

My beloved grosmutter und grosvader emigrated to Cincinnati in 1921 from farms near Lubeck. After WWII, my father built our home in the apple orchard of their farm. I remember my mom flapping her apron at the cows that wandered into our yard for a snack. I was so blessed to have them both so close to me.

SMASHED POTATO SALAD

Ingredients:
3-4 cups prepared mashed potatoes, made with butter, milk, salt, and pepper (mash with lumps)
1 cup celery, diced
6 green onions, sliced (or small yellow onion)
6-8 strips crispy, crumbled bacon
¼ cup finely chopped parsley
2-3 hard-boiled eggs

Mix gently with prepared sour cream or equal parts of Miracle Whip and sour cream.

Garnish with hard-boiled egg slices.

Refrigerate for an hour or more.

VARIATIONS:
Diced bell peppers, chopped sweet pickles, radishes
