Who doesn’t love the combination of almonds and chocolate? If you enjoy traditional marzipan and love chocolate, this chocolate marzipan recipe brings the two together in one delicious treat!
This naturally vegan recipe takes just 5 minutes to make and is perfect for enjoying with a cup of coffee or tea.
Made with finely ground almonds, powdered sugar, and cocoa powder, this easy variation of traditional eggless marzipan is especially nice at Christmastime, but can be enjoyed all year long.
Traditional German marzipan is made primarily from finely ground blanched almonds and sugar.
This chocolate marzipan recipe is a delicious variation of the original, with cocoa powder and vanilla extract added for a rich chocolate-almond flavor.
When Sylvie was developing her marzipan recipes, she brought both the traditional and chocolate versions along to a family dinner at a restaurant for us to taste.
Now, I'd heard of chocolate-covered marzipan before, but marzipan with chocolate mixed right in? That was something new to me!
Sylvie had made several variations and wanted our opinions. We all agreed that too much cocoa overpowered the lovely almond flavor of the marzipan. After a little family taste-testing, we settled on the version you see here, with just the right balance of chocolate and almond.
It's always nice when recipe testing turns into family time!
Start by placing the almond flour, powdered sugar, and cocoa powder in the bowl of a food processor.
Process until the mixture is well combined.
Next, add the almond extract, vanilla extract, optional rosewater, and water.
Process just until the mixture becomes crumbly but holds together when pressed. (The mixture may even come together into a ball.)
Turn the mixture out onto a clean surface.
Knead and shape it into a log.
Slice and enjoy immediately, or wrap the log tightly in plastic wrap and refrigerate for later.
For a little extra flavor, try adding one of the following when making chocolate marzipan:
You can also shape the chocolate marzipan into small balls and roll them in powdered sugar or shredded coconut. They make lovely homemade gifts!
Chocolate marzipan is delicious on its own, especially when served with a cup of coffee or tea.
Almond flour: You can use whole, chopped, or slivered blanched almonds (skins removed) and grind them into a fine flour.
Powdered sugar: You can make homemade powdered sugar by blending granulated sugar until very fine, although the texture may not be quite as smooth as store-bought powdered sugar.
Cocoa powder: Carob powder is often used as a caffeine-free alternative to cocoa powder. It has a naturally sweeter, slightly different flavor, although it hasn't been tested in this recipe.
Almond extract: You can omit the almond extract and just use vanilla, or try orange extract.
Vanilla extract: You can omit the vanilla extract, but it really helps enhance and deepen the chocolate flavor.
Rosewater: Rosewater is optional. For a twist, you can also try orange blossom water.
Water: For sweeter marzipan, try replacing some or all of the water with a liquid sweetener such as agave nectar or light corn syrup. Add gradually until the mixture holds together.

What is chocolate marzipan?
Chocolate marzipan is a chocolate-flavored variation of traditional marzipan. Cocoa powder and vanilla extract are added to the almond flour and powdered sugar for a delicious combination of chocolate and almond flavors.
Why
is my chocolate marzipan crumbly?
The mixture may be too dry. Add water just ⅛ to ¼ teaspoon at a time, processing briefly after each addition, until the mixture holds together when pressed.
Why
is my chocolate marzipan sticky?
Too much water may have been added. Try kneading in a little more almond flour or powdered sugar until the marzipan becomes easier to handle.
Why
did my chocolate marzipan turn oily?
Over-processing or over-kneading can cause the almonds to release their oils, making the marzipan greasy. Process just until the mixture holds together, and knead only briefly.
Can I use almond meal instead of almond flour?
Yes, but almond meal is often coarser than almond flour and may contain almond skins, giving the chocolate marzipan a slightly grainier texture. It will still taste delicious, but finely ground blanched almond flour is best for a smoother result.
