German Fried Potatoes Recipe – Oma's Bratkartoffeln
These bratkartoffeln (German fried potatoes) are a traditional favorite that's quick, easy, and irresistibly crispy. Perfect for any meal!

Ingredients:

1¾ pounds (794.5 grams) cooked
potatoes

2 tablespoons (28 grams) butter

8 slices bacon, diced
(optional)

1 cup (150 grams) diced
onion

salt and freshly ground
black pepper, to taste
Instructions:

Cut the potatoes into ¼-inch slices and
set aside.

In a large skillet, heat the butter and
sauté the bacon until golden brown.
Remove the crispy bacon pieces with
a slotted spoon and set aside. Remove
some of the butter/bacon grease, leaving
about 2 to 3 tablespoons in the pan. Set
the rest aside to use, if needed.

Add the potatoes to the fat in the pan
and fry over medium- high heat for about
5 minutes before turning to allow the
potato slices to brown. Turn, adding the
onions and continuing to gently turn as
needed. Add more butter/bacon grease,
if needed.

After the potatoes are browned, add the
reserved bacon and season with a little
salt and pepper. Serve immediately.
Notes/Hints:
- Just before serving, pour 4 slightly beaten raw eggs over potatoes, gently toss and allow to cook a few minutes until eggs are set. This is similar to Hoppel Poppel.
- Add fresh parsley, chives, and/or other fresh herbs.
- Add more or less onions, as desired. Chopped green onions - tops and bottoms - would be great.
- Add some leftover meat pieces to the potatoes while they are cooking.
- For vegan Bratkartofflen, omit bacon and use oil or vegan butter for frying.
