Oma's Eggs with Mustard Sauce (Senfeier / Eier in Senfsosse) 

Eggs with mustard sauce recipe, aka Eier in Senfsosse!  WUNDERBAR! It's one of those easy and quick lunch recipes that's very common in Germany, especially in Berlin and Bremen.

Makes 4 servings

Ingredients:

  • 4 tablespoons (56 grams) butter
  • 4 tablespoons (32 grams) all-purpose flour
  • 11⁄2 cups (360 milliliters) vegetable broth
  • 11⁄2 cups (360 milliliters) milk or cream
  • 3 tablespoons (45 milliliters) mustard
  • salt and freshly ground black pepper, to taste
  • 1 teaspoon (5 milliliters) lemon juice, or to taste
  • 8 hard-boiled eggs, cut in half
  • chopped fresh parsley, to garnish

Instructions:

  1. In another saucepan over medium heat, melt the butter and add the flour, stirring constantly.
  2. Add the broth and milk slowly, stirring until the sauce is thickened. If it’s too thick, add a bit more milk.
  3. Add the mustard and season with salt and pepper. Add the lemon juice.
  4. Pour the sauce over the halved eggs and garnish with parsley.
