Oma's Eggs with Mustard Sauce (Senfeier / Eier in Senfsosse)

Makes 4 servings
Ingredients:
- 4 tablespoons (56 grams) butter
- 4 tablespoons (32 grams) all-purpose flour
- 11⁄2 cups (360 milliliters) vegetable broth
- 11⁄2 cups (360 milliliters) milk or cream
- 3 tablespoons (45 milliliters) mustard
- salt and freshly ground black pepper, to taste
- 1 teaspoon (5 milliliters) lemon juice, or to taste
- 8 hard-boiled eggs, cut in half
- chopped fresh parsley, to garnish
Instructions:
- In another saucepan over medium heat, melt the butter and add the flour, stirring constantly.
- Add the broth and milk slowly, stirring until the sauce is thickened. If it’s too thick, add a bit more milk.
- Add the mustard and season with salt and pepper. Add the lemon juice.
- Pour the sauce over the halved eggs and garnish with parsley.
