German Vegan Lentil Soup – Oma's vegane Linsensuppe

Looking for a vegan lentil soup, vegane Linsensuppe, that's easy to make? Here's one that you'll make within 30 minutes. 

I didn't even know about it being vegan when I used to make this years ago. I just made it 'cause I loved it!

Servings:

Makes 8-10 servings

Ingredients:

  • 2 tablespoons (30 milliliters) oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 leek, finely chopped (optional)
  • 2 large carrots, chopped
  • 2 - 4 potatoes, chopped
  • 2 cups (400 grams) dried red lentils
  • 10 cups (2.4 liters) vegetable stock
  • 2 bay leaves
  • salt and freshly ground pepper, to taste

Instructions:

  1. Heat the oil in a large soup pot. Add onions, celery and leeks. Cook over high heat for about 5 minutes, stirring occasionally. 
  2. Add remaining ingredients. 
  3. Reduce the header, cover, and simmer for about 20 minutes or until the vegetables are tender.
  4. Remove the bay leaves.
  5. If you wish, use an immersion blender to mash up the veggies.
  6. Season with salt and pepper, and serve.
