Easy Tomato Bisque Soup – Oma's Tomaten-Bisque-Suppe
This tomato bisque soup, aka Tomaten-Bisque-Suppe, is great for all. Smooth, well-seasoned, and creamy, it's delicious as a light lunch or supper, served with some fresh crusty bread.

Ingredients:

2 tablespoons (30 milliliters) olive oil

1 large carrot, chopped

1 medium onion,
chopped

1 celery rib, chopped
-
1 large potato,
peeled and chopped

2 cups (480 grams) canned
crushed tomatoes

1 tablespoon (30 grams) tomato
paste

1 teaspoon (4 grams) sugar
-
2 bay leaves
-
4 cups (960 milliliters)
vegetable broth

salt and freshly ground
black pepper, to taste
Instructions:

Heat the oil in a large saucepan over medium heat. Add the
carrots, onions, celery and potatoes. Cover and sweat the
veggies for about 5 minutes, stirring occasionally.

Add the crushed tomatoes, tomato paste, sugar, bay leaves,
and broth. Bring to a boil.

Reduce the heat, cover, and simmer for about 20 minutes, or
until the vegetables are tender.

Remove the bay leaves.

Purée the soup either in a blender (be careful, it’s hot!) or
with an immersion blender.

Season with salt and pepper, and serve.
