Sweet Potato Soup Recipe – Oma's Süßkartoffel-Suppe

Makes 6 servings

Ingredients:

  • 1 cup diced onions
  • 1 - 2 tablespoons olive oil
  • 2½ pounds sweet potatoes, peeled and cubed
  • 2 carrots, peeled and chopped
  • 1 large apple, peeled and chopped
  • 5 cups vegetable stock
  • salt, pepper, nutmeg

Instructions:

  1. Heat the oil in a large saucepan. Add onions. Cook until translucent, but not browned, about 5 minutes.
  2. Add sweet potatoes, carrots, apple, and stock. 
  3. Bring to boil, reduce heat, cover, and simmer for about 25 minutes or until vegetables are tender.
  4. Puree soup either in a blender (Be careful, it's hot!) or use an immersion blender.
  5. Season with salt, pepper, and nutmeg.
