Oma's Super Easy German Oatmeal Cookie Recipe (Haferflockenkekse)

Here's my simple Oatmeal Cookie recipe, aka Haferflockenkekse, that's quick to make and can easily be altered to your tastes. Your kids will love helping you decide what to add to make them extra special.

Makes about 72 cookies 

Ingredients:

  • 5 cups (425 g) old-fashioned oats
  • 1¾ cups (398 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 2 cups (260 g) all-purpose flour
  • ¾ tsp (5 g) salt
  • 4 tsp (16 g) baking powder
  • 4 large eggs
  • 1 tsp (5 ml) flavoring (vanilla or almond, etc.)
  • 1 cup (170 g) chocolate chips (and/or nuts, raisins, etc.)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line 2 cookie sheets with parchment paper and set aside.
  2. Put the oats into a large mixing bowl. Add the melted butter and stir. Add the sugar and mix.
  3. Mix the flour, salt, and baking powder together in a separate bowl and stir into the oat mixture.
  4. In another bowl, mix the eggs and flavoring together and stir into the oat mixture along with the chips and/or nuts/raisins.
  5. Using a small cookie scoop or a tablespoon, drop the dough onto cookie sheets and flatten slightly, leaving 2 inches between cookies. You will need to reuse the cookie sheets to do all the cookies. Let the sheets cool before reusing.
  6. Bake for about 13 - 15 minutes, or until golden. Cool on a wire rack.
