Mutti's Lamb Stew With Green Beans (Lammeintopf Mit Bohnen)

Here's my recipe for lamb stew with a traditional German twist ... hearty, simple, and full of flavor. A one-pot comfort dish just like my Mutti used to make.

Makes 4 servings

Ingredients:

  • 1 - 1½ pounds (454 - 681 grams) lean lamb
  • 1½ pounds (681 grams) green beans, trimmed and cut in half
  • 1 onion, sliced
  • about 3 cups (720 milliliters) water or beef broth
  • salt and freshly ground black pepper, to taste
  • dried summer savory, to taste
  • 1 - 1½ pounds (454 - 681 grams) potatoes, peeled and diced

Instructions:

  1. Cut the lamb into cubes, approximately 1 to 1½ inches in size.
  2. Place the lamb, green beans, and onion slices in a pot. Pour enough of the water to just barely cover the meat and veggies.
  3. Season with salt, pepper, and summer savory, and bring to a boil.
  4. Reduce the heat and simmer for about 45 minutes.
  5. Add the potatoes and simmer for another 30 minutes.
  6. Adjust the seasonings, if needed, and serve.
