2. Oma's Quick Creamed Spinach Recipe
Are you in a hurry to make some creamed spinach? Do you have frozen spinach in your freezer?
Well, then, you're blessed because you can enjoy this side dish in minutes!

Makes 4 servings
Ingredients:
- 3 10-ounces (284-grams) packages frozen chopped spinach
- bacon bits (optional)
- 2-3 tablespoons (16-24 grams) cornstarch
- 2-3 tablespoons (28-42 grams) butter
- salt and freshly ground black pepper, to taste
- freshly ground nutmeg, to taste
Instructions:
- Place the frozen spinach into a saucepan and add just enough water to cover the bottom of the pan, about half an inch deep.
- Bring to a boil, then lower the heat to a simmer. Slowly stir as the spinach starts to thaw. Once thawed (it will only take a few minutes), let it simmer for several minutes. Add some bacon bits as the spinach simmers, if desired.
- Dissolve the cornstarch in a bit of cold water. Slowly add just enough to the spinach to thicken the liquid to your liking. Stir in the butter until it melts.
- Season with salt, pepper, nutmeg, and serve.
Notes/Hints:
- Add some bacon bits as the spinach simmers.
- Serve with boiled potatoes (put these on to cook just before you start the spinach). Fry eggs just as you're finished making the spinach.
