Traditional Bavarian Beer Cheese Dip (Obatzda)

Authentic obatzda recipe! This creamy Bavarian beer cheese dip is perfect for Oktoberfest. Serve with pretzels for the best German party snack.

Makes 6-8 servings

Ingredients:

  • 9 ounces (255 grams) Camembert, room temperature
  • 4 ounces (114 grams) cream cheese, room temperature
  • 2 tablespoons (28 grams) unsalted butter, softened
  • 2 tablespoons (9.4 grams) finely chopped red or sweet onion
  • 1 teaspoon (2 grams) sweet paprika, plus more to garnish
  • 1 tablespoon (15 milliliters) German beer, plus more if needed
  • 2 tablespoons (6 grams) finely chopped chives, to garnish

Instructions:

  1. In a bowl, mash the Camembert and cream cheese together with a fork. It can look a bit rustic—that’s perfect! Add the butter and mash until creamy.
  2. Add in the onions, paprika, and beer, and mix well. For a softer texture, add a bit more beer, just a little at a time, until you achieve the desired consistency.
  3. Cover and chill for at least an hour.
  4. Let it come to room temperature before serving.
  5. Stir and top with the chives and a dusting of paprika.

Notes/Hints:

  • No beer? A splash of milk or non-alcoholic beer works too
  • Can't get Camembert? Use Brie.
  • Experiment with different spices such as ground caraway seeds (very traditional) and/or cumin. 
  • For something different, stir in some grated radishes.
