2. Vegan Kale & Sweet Potato Soup

Here's a super simple vegan kale soup, aka Grünkohlsuppe, to make. Not traditionally German, but surprise, it's something even my hubby enjoys! It has lovely sweet potatoes, carrots and celery which round out the flavor. 

A pinch of cayenne to spice it up if you wish. You choose just how 'hot' you want it.

Makes 6 servings

Ingredients:

  • 1½ pounds sweet potatoes
  • 2 carrots
  • 2 stalks celery
  • 1 clove garlic, crushed
  • 4 cups vegetable broth
  • 3 cups water
  • 28-ounce can kale
  • salt and pepper to taste

Instructions:

  1. Peel sweet potatoes and cut into 1-inch cubes.
  2. Peel and cut carrots ½-inch slices.
  3. Chop celery
  4. Put sweet potatoes, carrots, celery, garlic, broth, and water into a large saucepan.
  5. Bring to boil. Reduce heat to a simmer, cover, and simmer for about 15 to 20 minutes or until the sweet potatoes are tender. 
  6. Add canned kale (drain, if there is a lot of liquid). Bring to simmer. Season with salt and pepper if needed.
