Dill Pickle Soup: Dillgurkensuppe - A Hearty Weeknight Recipe

Makes 6-8 servings

Ingredients:

  • ½ white onion, diced
  • 2 celery ribs, chopped
  • 2 small carrots, chopped
  • 2 medium (or 6 small) potatoes, chopped
  • 8 dill pickles, chopped
  • 1 cup (150 grams) ham, diced (thick ham slices, or ham steak)
  • 1 cup (250 milliliters) pickle juice
  • chicken broth, as needed
  • 1 tablespoon (15 milliliters) olive oil
  • 1 tablespoon (7 grams) Italian seasoning
  • 1 tablespoon (7 grams) paprika
  • 3-4 tablespoons (12-14 grams) dill weed
  • salt and pepper, to taste
  • approximately 2 cups instant potato flakes (optional)

Instructions:

  1. In a large pot, add olive oil and chopped onions. Sauté onions until golden brown on low heat.
  2. Add chopped celery, carrots, potatoes, and ham.
  3. Add pickles and seasonings, stir well.
  4. Pour in chicken broth, covering the veggies.
  5. Add pickle juice, and stir.
  6. Simmer for 40 minutes.
  7. Add potato flakes, starting with ½ cup, stirring until incorporated. Keep adding flakes and mixing until desired thickness. (optional)
  8. Serve topped with extra dill, and enjoy!

Notes/Hints:

  • Use dried or fresh dill.
  • For an even heartier touch, add shredded cheddar.
