Oma's Easy Cheese Soup (Käsesuppe)

Here's my easy cheese soup that's great on a cold winter's night. This German käsesuppe is delicious with a hearty loaf of German bread. 

Taking only about 30 minutes to make, this quick easy soup is a favorite among kids. Buy your cheese already grated - easier still.

Makes 4 servings

Ingredients:

  • 3 tablespoons (43 g) butter
  • 1 garlic clove, crushed
  • ¼ cup (33 g) flour
  • 4 cups (960 ml) chicken broth
  • ¼ pound (113 g) Gouda, shredded
  • ⅞ cup (210 ml) cream
  • salt, pepper, nutmeg to taste
  • 1 onion, sliced
  • 1 tablespoon (14 g) butter
  • chives to garnish

Instructions:

  1. Melt 3 tablespoons butter over medium heat in saucepan. Add garlic.
  2. Stir in flour and cook 1 minutes, stirring.
  3. Slowly whisk in chicken broth. Bring to a gentle boil, then reduce to a simmer and cook 10 minutes, stirring continually.
  4. Reduce heat to low.  Stir in cheese a handful at a time until melted. Stir in cream. Season with salt, pepper, and nutmeg. Do not boil.
  5. Warm 2 to 3 minutes until smooth and hot.
  6. Meanwhile, brown onion slices in 1 tablespoon butter.
  7. Serve soup topped with onions and chives.
