Oma's Easy Cheese Soup (Käsesuppe)
Here's my easy cheese soup that's great on a cold winter's night. This German käsesuppe is delicious with a hearty loaf of German bread.
Taking only about 30 minutes to make, this quick easy soup is a favorite among kids. Buy your cheese already grated - easier still.

Ingredients:
- 4 tablespoons (56 grams) butter, divided
- 1 garlic clove, crushed
- ¼ cup (33 grams) all-purpose flour
- 4 cups (960 milliliters) chicken broth
- ¼ pound (114 grams) Gouda, grated
- ⅞ cup (210 milliliters) cream
- salt and freshly ground black pepper, to taste
- freshly ground nutmeg, to taste
- 1 onion, sliced, to garnish
- chopped fresh chives, to garnish
Instructions:

Melt 3 tablespoons (42 grams) of the butter in a frying
pan over medium heat. Add the garlic and cook about 30
seconds.

Whisk in the flour and cook about 1 to 2 minutes, until
lightly golden in color, stirring constantly.

Add the broth and bring to a boil, stirring continually.
Reduce the heat and simmer for 10 minutes, stirring
occasionally.

Stir in the cheese and cream. Season with salt, pepper, and
nutmeg, and continue to simmer for another 10 minutes.

Meanwhile, brown the onion slices in the remaining
tablespoon (14 grams) of butter.

Garnish with onion slices and chives to serve.
