I'm looking for a recipe for tatar that has hamburger meat and raw egg?

Steak Tartar

You all forgot the most important ingredient, which is capers and anchovies!

  • chopped capers
  • chopped onions
  • one anchovy, finely mushed
  • mustard
  • egg
  • no ketchup
  • salt and pepper

    That's it!

    Even better Tatar

    Please, please do not use packaged hamburger (ground beef) as found in a market. If you cannot find a butcher to grind the beef (tenderloin is the preferred choice), then use a food processor to prepare the beef. Do not over-process. Mix ingredients to your taste.

    Additional ingredients can include:
    Dijon Mustard,
    Capers,
    Chives,
    soy sauce, or Maggi liquid seasoning

    Tatar tastes great with French bread and a great red wine like Merlot.

    Tartare

    I Make this quit often.
    Nowadays butchers won't grind for steak tartare
    at lest here in Washington State. What you need is a nice lean Sirloin steak that you grind about 4 times but not where it looks like ground beef! Add salt and pepper, 1 egg, and mix with hands lightly. Spread on a good rye bread that has been buttered and top with rings of onion. Hope this helps!

    Butcher for Tartar

    Go to Muenster and have the butcher at Fischer's grind the meat fresh for you. It is a bit of a drive, but he is German himself.

    Tatar Recipe

    Tatar (also spelled Tartar or Tartare) is a raw meat spread that's absolutely delicious with a really good German bread. It is a great appetizer that's one of my favorites.

    The most important thing about tatar is knowing your butcher. Since this meat spread is eaten raw, you must be assured that the ground beef you are getting is safe and fresh. DO NOT USE prepackaged ground beef. Go to a reputable butcher and let him know you are eating the meat raw and that you'd like this freshly ground.

    Ingredients:
  • 3/4 lb. lean beef, freshly ground
  • 2 egg yolks
  • 2 tbsp olive oil
  • 1 tbsp ketchup
  • salt, pepper
  • 1 tbsp finely chopped onion if desired

    Instructions:
  • Mix everything together with a fork, seasoning with the salt and pepper.
  • Serve on buttered toast, bun, or German rye bread.


    CAUTION: Please do not store this - it needs to be eaten fresh.
