Oma's Simple Rice Pudding

This simple rice pudding is so easy to make - just measure everything into a casserole and put in the oven. It's one of those easy dessert ideas that one can use with kids. They have fun measuring and mixing and end up with a delicious pudding enjoyed by all. Everything just goes into a 2-quart baking dish - easy to clean up after. 

The kids could hardly wait for it to be served! Which reminds me, I should make this next time the grandkids come to visit!

How to Make Oma's Simple Rice Pudding

Ingredients:

  • 6 Tbsp white rice (use regular long grain or basmati)
  • ½ cup granulated sugar
  • 1 tsp salt
  • 1 tsp cinnamon (optional)
  • 1 cup raisins (optional)
  • 4 cups milk
  • 2 cup water
  • 3 Tbsp butter

Instructions:

  • Preheat oven to 350°F.
  • Combine all ingredients in a 2-quart baking dish.
  • Bake, uncovered, for 2 hours, stirring once during cooking.
  • Serves 4

Hints:

  • Do double this recipe! You'll want lots!
  • When including the cinnamon, the rice pudding takes on a golden colour once it's baked.
  • If you want a white rice pudding, you can sprinkle the finished pudding with cinnamon instead. Also, carefully remove the golden 'crust' to keep the pudding white. (The 'crust' is delicious!)
  • Tastes great hot, warm, or cold!

I still prefer to double or triple the recipe to have enough rice pudding to serve (everyone always wanted extra!). Just use a larger dish depending on the amount you make. This homemade rice pudding was always a treat for our children.

This oven-baked version for Reisauflauf gives a fragrant cinnamon aroma throughout the house during its baking time. 

If you want a white rice pudding (as shown above), just stir in the raisins towards the end of the baking time. Sprinkle with cinnamon when serving.
