Gluten Free Potato Dumplings?

Has anybody ever tried substituting potato flour or quinoa for the all-purpose flour? Those of us who are German and gluten-intolerant need some help in making potato dumplings.

There's a recipe for using just potato starch sent in by Georg at Georg's Schelsiche Kartofelklöße.

They sound like they are suitable for a gluten-free diet. You can always enclose butter-fried bread croutons (gluten-free) in the centre. To me, that's what makes a "real" German potato dumpling, because that's what I grew up with.
